My friend Andrew from the Netherlands traveled to Vietnam once and fell in love with Vietnamese cuisine. He has a Vegan diet. So I made these vegan Vietnamese recipe versions for him. Ingredients are also easy to find in his country. This can reminisce the good times in Vietnam when he makes these foods.

Bánh Xèo is a traditional street food in Vietnam. The creation of this dish could be somewhere in Central Vietnam through the fusion of French culture from the French colonial times or South Vietnam by migrating immigrants moving into Vietnam and mixing with the surrounding culture. Others believe Bánh Xèo came from mixing Cham culture and Vietnamese cuisine.
Pho Vietnam, widely known as Vietnamese noodle soup, is a highlight of Vietnamese culinary. Pho is also considered as one of the most popular street food in almost all big cities of Vietnam such as Hanoi, Halong, Nam Dinh, and Ho Chi Minh City. Up to now, there has been no dish that can represent the essence of Vietnamese cuisine like pho.
